SNACK TIME:
Veggies and Dip:


 Eat from the Earth's bounty and enjoy some fresh vegetables.  Buy your favourite dip or better yet make your own.  For an easy dip add onion soup powdered mix to sour cream or freshly cut dill to Greek yogurt or make your own hummus with a can of chickpeas, lemon juice and tahini. 

Earth Cookies 2 Ways:

Sugar Cookies: Make regular sugar cookies from your favourite recipe and then “paint” them with green and blue icing.

Chocolate Cookies: Make your favourite chocolate cookies and then ice them with green and blue and white icing swirled together or with coloured sugar sprinkles (or both as we did).

Fun Food Ideas

LUNCH:

Earth Tortilla:

Use a cookie cutter to cut out smaller circles from a green spinach tortilla.  Use pre-cut cheese slices or slice your own and then shape into a circle with the same cookie cutter.  Cut inside the cheese to make an Earth like pattern. Set on your tortilla.  Kids can then roll some fresh veggies up in their Earth and enjoy!

Swirling Earth Yogurt Dip:

Ingredients: Plain or vanilla yogurt, blue and green food colouring, (Optional) fresh sliced fruit like apples, bananas, strawberries, granola.
 

Step 1: Put the yogurt in a bowl and squirt some food colouring in it.
Step 2: Have your child swirl the colours using a toothpick.
Step 3: When your child is finished he/she can eat it just like that or can dip some fresh fruit into it for a different treat, or you can layer it with granola to make a parfait! 

BREAKFAST:
Green and Blue Earth Swirled Pancakes:

To make a quick batch of pancakes (makes 8 in total) mix 1 cup of flour, 2 tsp of baking powder and 2 tsp of granulated sugar together in a large bowl.  In another bowl beat 2 eggs and add 1 cup of buttermilk.  Next mix the liquids into the dry ingredients and combine.  Heat your non-stick pan or griddle with some oil or cooking spray on low.  I use an ice cream scoop to press out batter evenly.  To make colourful pancakes I just added two drop of blue and 2 drops of green food colouring to the already formed pancake batter on the griddle and then used the end of a spoon to swirl.  Flip pancakes when bubbles form!  Enjoy!

This recipe didn't turn out for me!  I couldn't find powdered drink mix and tried to substitute jello powder which I DO NOT recommend!  This snack didn't make it to the school for my son's class for his birthday.

Some Earth Day friendly tips

for when you are eating:
 
Visit a farmers market to buy locally grown and produced foods.

Store foods in re-usable containers rather than plastic wrap

and plastic bags you would throw away.


Buy a reusable bottle and lunch bag for your child's lunch.

Buy your groceries using re-usable bags.


Avoid packaged foods.

Try to Pack a litter-less lunch every day!

DESSERTS:

Earth Day Cup Cakes:

Make your favourite vanilla cupcakes (you could even use a package for white cake…I won’t tell) and then separate the batter into two bowls.  Add blue food colouring to one and green to the other and then mix to colour the batter completely.  Spray the muffin tin or cupcake liners with oil and then spoon the two different colours into each one.  When they bake they will have two different colours in them!
​  You don't even have to ice them beause that would hide their colour!
